our 10 hens are all laying now and I'm looking for egg recipes- sweet or savory. I already use them in ice cream, fritattas, homemade pasta, etc. I prefer somewhat low fat, for instance I only use every other yolk. (2 eggs= 1 whole egg and 2 egg whites)

one good way to use up a lot of eggs is to make angel food cake with the whites and egg noodles with the yolks...

One of the heart healthy recipes I got was deviled eggs only you use mashed potatoes with the mustard, etc. instead of the yolks. Surprisingly, a lot of people don't notice the change.

Welcome to the life of figuring out how to use up the eggs. LOL
As said Angel Food cake uses up a dozen eggs with the whites, Pound cake, egg casseroles use a good amount. Fresh eggs are harder to boil and peel, but my wife has found a way to make it work. Not low fat, but we do puffed pancake. 4 eggs, cup of flower, cup of milk. Pretty much every other meal in the house has an egg in the recipe to help diminish the overstock. Not to mention neighbors are normally happy to take some, normally we try to trade 6 eggs for an empty egg carton. This helps them out and us out for storage at the same time. Also they last up to 3 months if not washed so it is always good to stock up for when they molt or get broody.

This recipe sounds great. Could I use something lighter then the half and half without changing the texture? I know it would change the taste a little.

I wouldn't. This recipe is not for dieters, people with high cholesterol or the lactose-intolerant. The original poster asked for our favorite egg recipe. This is a once-a-year recipe.

here are two other ways to lower the fat/cholesterol:
1. replace half the yolks with an equal part of fat free cottage cheese, add a bit of mustard, and lite mayo and what ever seasonings you usually use. (I like Ranch powder, and onion powder. Some people add celery seed, chives, dill, relish, etc) Food processor the cottage cheese/yolk mix til smooth.
2. do the same as above, but use canned white beans instead of cottage cheese.
#1 gives you extra protein and calcium, #2 gives you added fiber aned protein.
