Although I love Mexican style chorizo pork sausage, (with actual ground pork, not simply the oily variety), cooked with scrambled eggs and served in a burrito made with a large toasted flour tortilla, there is another thing I like to do do with surplus eggs!
Pickled Eggs!! If you are interested in pickled eggs there have been some good recipe recommendations in past threads.

sounds great.
I saw a recipe on TV several years ago, it was a creme brulee type baked french toast. They were made in individual custard cups and the french bread slices were pushed down into the cup and the custard mixture poured over. There might have been a brown sugar topping or some kind of syrup over the top, I don't remember. It was served with fresh berries on top and a dollup of whiped cream. Looked decadent.

hmmm........... it's been a LONG time since I made custard. Maybe I should make up a batch of custard, or better yet, a coconut custard pie!
I don't have a specific recipe for custard. I generally allow one egg, 3/4 cup milk, 1 Tbsp sugar (or substitute) and 1/2 tsp vanilla per serving. I put in individual custard cups in a water bath and bake at 350 til knife inserted in center comes out clean.

Yay!!! I used a dozen eggs in one fell swoop:
Kielbasa Fritatta
1/2 turkey kielbasa, sliced thin (put other half in freezer for something else)
3 medium potatoes, washed, microwaved, sliced thin
1 medium onion, diced
12 eggs. (I only used 6 of the yolks)
low fat cheddar, about 1 cup
~ 1/4 cup hand grated hard provolone
(note, use whatever meat and cheese you like. Italian sausage, precooked, or ham, or cooked bacon, or breakfast sausage, whatever. Try swiss, gruyere, cheddar, asiago, or a combination)
Pre heat oven to 450
Saute onion and kielbasa in a large frying pan with oven proof handles
when onions are translucent, add potatoes and keep sauteing a bit
beat eggs
pour beaten eggs over potato mixture and turn burner down to medium
cook for a few minutes, lifting edges and allowing raw eggs to run down under the set eggs.
When almost set, season with pepper and top with cheese.
Put in oven for about 10 min., until puffed and cheese melted and just beginning to turn golden.
Cut into wedges and serve with salad or vegetable.
Serves 4-6.
Veggies also go well in fritatta. Toss in leftovers, like asparagus, broccoli, or spinach/swiss chard.
This cost me less than $5 to make 6 servings:
$2- eggs (actually, my hens laid the eggs)
$1- 1/2 kielbasa
<$0.50- 3 potatoes
$1- half a block of low fat cheddar
<$0.30- med onion

I made a version of this recipe tonight.
I say a version- I deviated slightly only due to particular ingredients I had on hand.
I used
9 eggs
1/4 cup sugar
~ 2/3 quart of skim milk (all I had left)
one can of evap milk
~ 1/3 can of condensed milk (left over from another recipe- didn't want to waste it!)
~2/3 quart half and half (left over from another recipe)
cinnamon, nutmeg
Extracts: butter-rum, brandy, vanilla
It's excellent, made ~ a half gallon. Thanks for posting it and sorry for the liberties I took-- I'm a "don't waste" cook!!

Here is a different Egg Nog recipie using two eggs
Make a 7 minute frosting then mix the two yolks with powdered sugar until very thick and then blend into frosting with a 1/4 tsp of cinnamon.
In a warm cup pour boiling water over a big Tsp of mix along with optional brandy, Stir and spinkle nutmeg over the top and serve.
