Actually..... I don't have a recipe. Just throw things together and it always comes out good I just started adding some minced chipoltle pepper to my chili

Hi for us while camping we just add about every knid of meat that we have cooked over the campfire,bugers, boneless chicken breasts,smoked sausage,steak,brats,pork loin,chops etc....we just chop it up and add it to the chili. We spice it up the way you would for chiliand of course it's always taste better after simmering all day over the campfire....hhhmmmm kinda makes me wish I was making some now. We have even made up extra meat just to bring home freeze and make later. Not the same but the "smoky" flavor still in the meat. We have a local BBQ place who makes thier chili with the leftover smoked meat from the day before and boy does it taste good too....just my thoughts for making some.

For years I tried my own recipes. Gave up and now use Carol Shelby's chili mix, with a few modifications.
2# ground beef, but finely chop and saute a large onion and one green bell pepper before adding the beef to brown. From the mix, I use all the chili mix, all the cayenne, half the salt, none of the masa. Add water until desired consistency. Then add 1/2 can of Rotel original diced tomatoes and green chilis. I thicken it with a couple tablespoons flour dissolved in cold water. Like that better than the masa taste.
Ashamed to admit, it beats the heck out of anything I created! We make a meal or two off it, then freeze remainder in one bowl size pint bags.

I like to add a tube of chorizo to mine. I buy it at WalMart.
If we have any steak or roast or anything like that I will chop it up into little pieces and add it also.
I like to cook it and let it cool down and then heat it up before serving. There are many other things I add but they are my secret.

My wife always goes to the grocery store and buys a packet of French's Chili-O and then follows the label directions. It turns out great everytime. In fact, I'm hungry for some right now.

Its always about the spice, how much and how fresh. If I was going to compete I would buy fresh spices and use a balance of chili powder, cumin, garlic, dry mustard and nutmeg.
I should add, be careful with the beans because they do tend to dilute the spice. If you use spiced beans then you will change the spice in the mix.

If you are going to compete it should be YOUR recipe,not someone elses!!! If you don't have a tried and true recipe of your own,then why are you even entering? Editing to add:I would be very upset for someone to win a competition using my recipe and they get the credit and prize for it!
