Traveling north from San Diego to NorCal. Leaving SD between 6am and 7am.
5N all the way (doubt it)?
15N to 210W to 5N ?
15N to 138 W to 5 N (I know the shortcut through Palmdale-S St.)?
15N to 138 W to 14 E to 58 W to 99N to 46W to 5N (99N to 4W to 5N)?
15N to 395N to 58 W ?

I'd say: 15N to 138 W to 5 N (the shortcut through Palmdale), but on second though, the 15N to 210W to 5N would be quicker and easier.
For a more scenic route, do the 15N to 210W and keep on 210W without turning at Pasadena to the 101N.

The shorter the better. The 8month old will have trouble with 11 hrs I'm sure.
Will the 210 W be fine at 8am?

The 210 is probably your best route, mush less traffic than any of the others. Expect congestion at the 210/5/14 area. I usually take the truck route through this area when in the MH.
As deserthawk mentioned, be careful at the 101/210 (actually I think it is the 134/210) intersection as you actually have to turn off of the 210 to get to the 210 going east. If you stay straight on 210, you'll wind up on the 134. Just take the 25A exit and it will keep you on the 210.
Other routes... taking the 138 out of Cajon Pass to Palmdale...14 north from palmdale to the 138 turn off between Lancaster and Rosemond then up to I-5.
You can also take I-15 to the 395 to the 58 at Kramer junction and then west on 58 over Tehachapi Pass to Bakersfield and then over to I-5.
Both of those will add at least one to three hours depending upon traffic. 395 has a lot of signals in the Hisperia/Victorville/Adelanto area. The 138 has you going through city surface streets in Palmdale.

At 8 am the 210 will most likely be a parking lot in the Pasadena area. Try hitting it after 9.

If you happen to miss the 210-N exit in Pasadena and stay on 134-W then don't fret, you can stay on that and it will take you to I-5 near Glendale/Burbank.
Whenever I would travel to Burbank from home (Temecula) I would take the following:
I-15 N to I-10 W
I-10 W to CA-57 N
CA-57 N to I-210 W
I-210 W to CA-134 W to I-5 N
Taking I-15 N to I-210 W is likely to add a little time to your route, going I-15 N to US-60 W to CA-57 N involves surface streets to go from US-60 to CA-57, so I found the I-10 to CA-57 route to work the best.
If you can wait an extra hour and leave at 8am then traffic will be better, that puts you in Temecula around 9am which is when I'd leave and it would take me no more than 1.5 hours to get to Burbank.

Depending on your final destination consider the 126 west to the 101. More scenic than the 5 north of Santa Clarita.

15 to 210 (after 9) to 5 then the 126 to the 101. the filmore turnoff (126)is very fast and scenic. Or the 5 all the way up the central valley. i dont think the tule fog is setting in yet.

Depends what day of the week. The 210 at 8am on a weekday is not very desirable...as suggested, wait until after 9am. If you'd like to avoid LA AND the Grapevine, then head up further on the 15 (you get Tejon but I like that one better)and cut over to Bakersfield.
