We are visiting Branson for a week and have another week to kick around Eastern Oklahoma and Arkansas....what would you recommend seeing in those areas??? We like historical sites and museums...and places to camp/bike along the water....

There are many large lakes in that area.
Also if you go down into Oklahoma the Will Rodgers Meseum in Claramore.

Hope you enjoy your visit to 'our neck of the woods'. 
Head S. from Branson to Eureka Springs, AR. Plan on at least a day for shopping & sight-seeing there. Then, from Eureka, head west on US 412 (have to take some other roads to get on 412) to Dripping Springs State park to see the waterfall- maybe even stop at the Cherokee Nation Casino in Siloam Springs if you're into that kind of thing.
Keep going West until you get to State Highway 10. Turn left (South) on 10 which goes along the Illinois River to Tahlequah (scenic drive). If you have time, a float trip down the river is usually quite pleasant. The Cherokee Nation headquarters is in Tahlequah. They have museum, gift shop, etc.
If you'd rather head back towards Branson, turn N. on Highway 10 (from US 412) and you'll go by Eucha (pronounced Ewchee) Lake. It's a small resevoir where you can get in the water if you want. Mostly small towns, so there's not really any "attractions", but it's a nice drive up to Jay, OK.
If you'd like to come further into NE OK, come on over to Tulsa. It's not a bad drive from Branson on the turnpike, and there's more to see & do. Check out http://www.greencountryok.com

Might want to stop in Ft.Smith and go by the old court house. Lots of history where the "Hanging Judge" worked!!

I also recommend stopping in Ft. Smith/Van Buren area if you like history. Several small local museums in Ft. Smith. If you like being around water, travel back to the East of Ft. Smith on I-40 to Russellville and stay at a State park, Lake Dardanelle. Also along I-40 East between Ft. Smith and Russellville is the town of Ozark. A nice Corp. of Engineer park is located there, Aux Arc (pronounced Ozark). It is also along the river and a nice quiet place to stay. Aux Arc is not far from the Arkansas wine country. Several small wineries are located a few miles from Ozark in Altus. Visiting those will be a nice day trip.

Redcatcher made a good suggestion. We really like the wine country area of Arkansas. Weiderkehr Winery in Altus has RV hookups at the winery for $10 w/e. Have stayed there many times, and need to go back (the wine rack is empty). There are about 5-6 wineries in the Altus area, which is about 30 miles east of Ft. Smith, right off of I-40.
Also, in eastern Oklahoma, check out Grove, Oklahoma. A very nice campground there is Cedar Oaks Resort. Right on Grand Lake o' the Cherokees. In Grove is a great walk-thru museum called HarBer Village. If you're "into" antiques, this is the place. Used to be free, now a very small fee to go through. We were just in Grove a couple of weeks ago with one of our camping groups.

As someone said - be sure to see Eureka Springs. The only thing I differ on is I believe you need more than one day there. You could spend a day downtown and a day to see other things around the area. Make sure to see the Passion Play there and also Thorncrown Chapel. There is great trout - guide fishing on the White River close to there and you may not care for this but the Ranger Boat Company is in Flippin and offers free tours where you see now they build boats. I am prejudiced about them but I think the tour is very interesting.
You might also like to stop and see old car museum and camp for a day or so at Petit Jean Mountain State Park near Morrilton, AR. It is a great place to RV camp and visit.

As close as your are to Eureka Springs, it is a MUST see if you haven't already.
You could spend several days there poking around town and seeing the Passion Play.
Queen Wilhelmenia SP is a pretty park, and you'd enjoy the Talahenia Drive over into OK from there.
