Gang!
Well I am torn between a 09 Sydney Outback 310BHS and a Forest River Sierra 351BHT. Price is right on either model. I really like the 3 slide outs on the Sierra but love the interior of the Outback.....ANy thoughts?

If I liked them both equally, I'd go with the one with the least moving parts (slides). YMMV

I think I would go for the Sierra. That floorplan is great!

Last year when we finally made the decision to move up from our 1981 Prowler that we've has for 25+ years two main areas we looked for was aluminum framed both sides and roof and lots of cabinet and counter space especially where I would add a shelf in the cabinets to basically double what they could store and you could get at. The wife wanted two separate sitting areas and not like the couch and dinette right next to each other and both had to have a good view of where the TV would set. She also wanted a fully length closet and not just those somewhat useless shirt closets that everyone just puts shelves in them. We looked at the Outbacks and really liked some of the living arrangements, features and construction, but none that we looked at had anything but the tiny shirt closets.
Our current trailer has a double full clothes closets, two shirt closets a single slide that opens up the kitchen area and more counter space than I see in even some of the higher end MHs.

WOW, that Sierra is almost 40' long. Are you gonna tow it or put it on a permanent site?

I know the frame flex issue on the Sierra isn't a issue (that I know of) on their travel trailers. However, a quick read in the 5th wheel forum will show many people with cracking slidewall's and frame issues above the pin box area. This issue covers a few years of production including new units.
They have knowingly made these units with a problem. That simple fact makes me very uneasy about their reputation as a brand and their ethics as a company. I would vote for the Sydney, I am partial to Keystone anyhoo.

Well I put the deposit down today on the 09 Seirra 351BHT and will try to go look at it this weekend. Still on fence between this and the Sydney so after I look at the Seirra I will make my decision...

The best way I know to help you help you decide is this:
Go and spend about 1 to 1/2 hours in each one. Pretend to "camp" - basically pack it. Where will the bbq grill go? dishes? Pots and pans? Towels? Camp chairs, outdoor table, screen room, coleman stove? Clothes for extended trips - socks? Shoes? is there hanging room or shelving to help accomdate clothing for longer trips? Games? Toaster oven and electric skillet or griddle? silverware, cooking utensils, dish towels, foil, zip lock bags? Canned goods and other staples? Coffee pot? Fresh water hose, sewer hose and other hook up necessities. Pretend to cook a meal - what's the counter space like? Can you cook taco meat and have room to chop the veggies at the same time or will you have to depend on the stove top cover as "counter space"? "use" the restroom - can you sit on the toilet and still close the door? Can you shower without being a contortionist? If someone's in the shower and someone wants to brush their teeth will this be an issue (we found out doing this that we preferred the bathroom sink just outside the bathroom for this reason and it was the correct choice for us). After an hour does your head hurt from the color and design of the fabric (trust me, some do 
Now, it's raining outside. Is there a place for everyone to go without everyone crawling all over each other? If you want to read and your SO wants to watch TV - is there the ability for one to that without bothering the other? Can everyone find a place to sit AND watch the movie or does it require that 6 people share a couch made for 2 to see the tv?
Almost can guarantee that by the time your done doing this on both those trailers, one of them will stand out more as being "packing" and "camping" friendly and will feel more like home for you and your family.
IMO this is the best way to decide between 2 trailers.
