I have a 2500 Sub and are looking for new wheels. I will be doing some heavy trailering, so what should I be looking for in a new wheel that will be able to handle the weight? Thanks in advance.

First, you need to know how much weight. Then, tell the sales representative how much weight the wheels will be required to carry, and what load range tires will be installed, and what air pressure you expect to operate at. The sales rep will then have the information needed to make recommendations.
Good luck.

Won't the OEM wheels carry what it's capable of carrying/towing?

Alcoa makes heavy duty aluminum wheels and Stockton Wheel (near Stockton, CA) makes heavy duty steel wheels. I put Stocktons on my truck to carry the very heavy welding utility body on it. They are rated 4000 lbs @ 100 psi.
In reality though, I doubt you will need to change your stock wheels for pulling a bumper-pull type travel trailer with a 3/4-ton Suburban. The stock wheels should be rated around 3000 lbs each. You may want to upgrade to an E-rated LT tire though for greater tire sidewall strength and thus greater stability and less roll/squirm when towing if your Suburban does not already have them.
Here is a pic of my Stockton steel wheels-

The ONLY reason for changing out the rims would be if you were to go to a wider tire, or one with more PSI or load range than the stock tires and rims. Otherwise, your quite frankly, spending money for nothing! Unless of course you are trying to get some fancy aftermarket rims, and this is the ONLY way past the better half!
Otherwise, why? There is no logical reason to change out the rims to tow heavy! I've towed at twice my GCWR with my old 96SW K3500 and stock rims, twice the tow rating with stock rims, not only that rig, but 8 others! Now if hauling heavy, ie carrying a load heavier than stock, now time to think about new rims and tires, possibly springs, axel tube etc, would be cheaper to buy a new truck by then.

Your title indicates you want new trailer wheels and your question indicates you want new wheels for your 2500 Sub - which one is it?

Most 16 through 20" wheels can handle any weight you need. Make sure the tires you pick don't change the outside diameter, plus be sure they can do the weight. There is really no reason to go past 17" it just adds unsprung weight and makes the brakes and suspension work more. This effectively reduces tow capacity.
