Not camping related, but I came here for some help. I Love to cook and I am providing green beans and baked beans for husbands company picnic. I'm not sure how much I will need for 100 people?? Can any one point me in the right direction? Thank you so much! Cherri

Baked Beans for 100 - 2 gallons

Green beans - 3 gallons

Generally, Speaking you can get about 25 servings from a number 10 can.
If you are going to allow seconds or maybe even thirds, you will need more.

I have a cookbook that has recipes specifically for large crowds; unfortunately I was unable to locate it for you.

An Amazon search resulted in the following:

I agree you'll need more. For fire-dept fund-raisers we use 6 #10 cans of baked beans to serve around 100. You may have a few left, but i'd rather have a few left than to come up short.

Hi,

Are you going to be the only one bringing food, or will 100 be bringing a small portion of food? That can make a huge difference between having enough, or way to much.

What I do when making a pot luck is bring about 2 pounds of food, and put less than a pound on my plate, so there is always a lot of left-overs.

One easy to make dish that I made recently is this.

1 can of Cream of Celery soup
1 can of Cream of CHicken soup
2 cans of canned Chicken - mine are from Costco, about 12 oz.
1 pound of pasta shells - boil them

In a 4 quart crock pot, I drained the cans of chicken, added the soup, 1 can of milk, and heated that. I boiled and drained the pasta, added that to the mixture. This took about 20 minutes total time. If the sauce is to thick, add some more milk.

Then you can heat it for about 2-4 hours, making sure to unplug the crock pot once 1/2 of the food is gone, so that it does not overheat the remaining portions. It will fill the 4 quart crock pot.

Another simple rescipe is to take some rice, cream of mushroom soup, and ground up hamburger.

Boil the rice, brown the hambuger, and add 2-3 cans of cream of mushroom soup with 2 cans of milk to a 6 quart crock pot. Add the hambuger and rice, stir.

You will have to test out this recipe on your family to get it right, then triple the size for the event. I would start out with a cup of rice, and pound of hamburger, and one can of soup, then see what is missing. You might not want to use all the rice (1 cup makes about 3 cups once boiled) but ad it slowly until you get the consistancy you want. Have extra soup on hand in case you want to thin it out some more.

You might also want to ty it with cream of chicken soup and chicken instead of hamburger.

For a gravy, my friend makes it this way.

One can of cream of mushroom soup, 1 or 2 cans of mushrooms (drained) and some curry powder. Just sppinkle some in until it tastes good. I think he adds some milk or water to keep it thin, but not to thin.

It is great served over rice, mashed potatos, and other things.

Another thought is to get several pre-cooked chickens from Costco, and serve them with a large pot of rice, mashed potatos or whatever. A few pounds of frozen corn, ect.

WICKED BAKED BEANS
(Beans that will even make Chili Heads happy)

6-8 strips of bacon cut into 1/2 inch squares
1/2 Medium onion, diced
1/2 Bell pepper, diced
1 - 2 Jalapeño Peppers, diced (seeding is optional)
1 - 55 ounce can Bush’s Baked Beans
1-8 ounce can of pineapple chunks, drained
1 Cup Brown Sugar, packed
1 Cup ketchup
1/2 - 1 Tbs. dry (ground) mustard

Sauté bacon pieces in fry pan until crispy and remove from pan with a slotted spoon. Sauté onion, bell pepper and jalapeño pepper until tender.

In a large mixing bowl combine beans, pineapple, brown sugar, ketchup and dry mustard. Stir in bacon pieces and vegetables. Pour into a 12X9 or a deep 9X9 aluminum baking pan. (While mixing if things look dry, add additional ketchup 1/4 -1/2 cup at a time)

Place in a 220-250° smoker for 2 1/2 – 3 hours (make sure temperature of the baked beans reaches 160° ) or place in a 350° oven and bake for 1 hour.

NOTE: If you are making these beans as a side dish for Kansas City style pork ribs, smoke the removed skirt meat for 1-1 1/2 hours, then dice the skirt meat and stir into the Baked Beans.

DISCLAIMER

With the Jalapeño pepper and the dry mustard these beans have the potential for some MAJOR heat. CAUTION should be exercised when feeding these beans to small children and/or the elderly.

To make this recipe Family Friendly, omit the Jalapeño pepper and the dry mustard.


Wife drives it FAST, hubby fixes it when it breaks.

you got some good advice and links above.. How about this idea? (tongue firmly in cheek) season them with something that doesn't taste good in beans,, NO one would come back for seconds and word will spread before you run out.. Then just toss the rest.. They will never ask you to provide beans again. :-)
