Forgive me if this has been covered before but I'm looking for some new recipes for Gr beef. I have to face it, its become budget time for me, and also we buy our beef by the 1/4 so we always have a lot of ground on hand. I'm not complaining just looking for new things. Got any good ideas? I've had just about all the goulash I can stand. We like the usual burgers and tacos. Not much for the stroganoff type things though. What else is out there? I'd like to make something like the sirloin burger soup that campbell's has, or some variation. thanks
A ridiculously easy ground beef recipe is one of my favorites from childhood. Mom probably used it because it was always budget time at our house. Brown a pound or 2 of ground beef, drain, and add a can or 2 of red kidney beans, juice and all. Let it simmer in the pan for as long as you feel like, but be careful not to boil off the juice. Longer it simmers, better it tastes. You can add salt & pepper to taste, and I've been known to toss in a few drops of tabasco and maybe some mushrooms and/or onions, or even onion flakes. Mom always served with boiled potatoes and a veggie, so that's usually what I do too. Couldn't be easier, and tastes great! DW loves it too (maybe just because I'm cooking it, though!)
8-12 ounces small or medium shell macaroni
2 small cans tomato paste
1 can whole kernal corn, drained
1 cup chopped onion
2 pounds hamburger meat, raw
8 ounces grated cheddar cheese
salt and pepper to taste
Cook shell macaroni according to package directions. Place in greased 9x12 casserole. Spread small can tomato paste atop macaroni; cover with onions. Cover with corn. Spread remaining can of tomato paste atop corn. Salt and pepper; crumble raw hamburger meat on top; add more salt and pepper. Bake at 350 degrees till beef is done (approximately 30-40 minutes); cover with cheddar cheese and cook till cheese melts.

Have you tried the website allrecipes.com? They have some really good recipes for ground beef. We buy a half a beef every year so we use a lot of it too. There is a recipe on there for Bacon-swiss meatloaf that is really good.
In skillet, melt 3 tbl. butter
add: 1 med. chopped onion, 1/2 lb hamburger. Heat through to remove
pink color.
3/4 tsp. salt
Pepper
Put: 3 cups coarsely shredded/sliced cabbage in bottom of well greased
baking dish. Add browned meat and onions.
Add: 3 more cups of shredded/sliced cabbage on top.
Pour 1 can of tomato soup over the top of the mixture. Cover.
Bake: 350 for 1 hour or until cabbage is done.
Beef Skillet-WW
8 oz. lean ground beef
2 T. onion flakes
1 C sliced fresh mushrooms
1 C cooked (crisply) sliced carrots
1 can French green beans, drained
1 can diced tomatoes (any kind) (I like Rotel)
1 C water
1 C cooked macaroni
Season however you like. We use basil, Cajun spices, salt, pepper & garlic.
Brown meat with onion in a large skillet, and drain.
Add everything else and simmer 15 minutes.
This is a Weight Watcher recipe and excellent. 1/3 skillet=5 points.
French Onion Salisbury Steak
Makes 4 Steaks; Total Time: 45 Minutes
1 1/4 lb. ground chuck
1/4 c. fresh minced parsley
2 TBS. scallion, minced
1 tsp. kosher salt
1/2 tsp. black pepper
2 TBS. all-purpose flour
2 TBS. olive oil
2 cups onions, sliced
1 tsp. sugar
1 TBS. garlic, minced
1 TBS. tomato paste
2 cups beef broth
1/4 cup dry red wine
3/4 tsp. kosher salt
1/2 tsp. dried thyme leaves
4 tsp. minced, fresh parsley
4 tsp. Parmesan cheese, shredded
Cheese Toasts
4 slices French bread or baguette, cut diagonally (1/2" thick)
2 TBS. unsalted butter, softened
1/2 tsp. garlic, minced
Pinch of paprika
1/4 cup Swiss cheese, grated
1 TBS. Parmesan cheese, grated
Combine chuck, parsley, scallion, salt and pepper. Divide evenly into 4 portions and shape each into 3/4"-1" thick oval patties. Place 2 TBS. flour in a shallow dish; dredge each patty in flour. Reserve 1 tsp. flour.
Heat 1 TBS. oil in a saute pan over medium-high heat. Add patties and saute 3 minutes on each side, or until browned. Remove from pan.
Add onions and sugar to pan; saute 5 minutes. Stir in garlic and tomato paste; saute 1 minute, or until paste begins to brown. Sprinkle onions with reserved flour; cook 1 minute. Stir in broth and wine, then add the salt and thyme.
Return meat to pan and bring soup to a boil. Reduce heat to medium-low, cover and simmer 20 minutes.
Serve steaks on Cheese Toasts with onion soup ladled over. Garnish with parsley and Parmesan.
For the Cheese Toasts
Preheat oven to 400º F.
Place bread on baking sheet.
Combine butter, garlic and paprika and spread on one side of each slice of bread. Combine cheeses and sprinkle evenly over butter. Bake until bread is crisp and cheese is bubbly, 10-15 minutes.
2-Alarm Chile --Lowfat
Serves: 8 Servings
Ingredients:
* 1 lb Extra-lean ground beef (581)
* 1 md Onion -- chopped fine (46)
* 8 ts Garlic -- finely chopped (18)
* 1 lg Green pepper -- cut into 1/2 " (32)
Instructions:
2 cans 28oz Crushed Tomatoes (650)
2 teaspoons Oregano
2 teaspoons Cumin
3 tablespoons Chili powder
2 tablespoons Unsweetened cocoa powder (40)
2 teaspoons Sugar
1 teaspoon Crushed hot pepper
1 teaspoon Tabasco sauce
1 can 15oz kidney beans -- rinsed in a strainer (350)
In a 2 1/2 quart saucepan cook the meat over medium heat until it is well
done, about 6-8 minutes, stirring frequently to crumble the meat. Pour off
the fat. With a slotted spoon transfer meat to paper towels to absorb extra
fat and wipe the remaining fat residue from the saucepan. In the same pot,
saute the onion, garlic, and green pepper with 1/2 cup of the crushed
tomatoes for 3 minutes. Add the oregano, cumin, chili powder, cocoa powder,
sugar, hot pepper, and Tabasco sauce, and continue cooking for 3 minutes
more. Add the beans, meat, and the remaining crushed tomatoes, and cook
together for 25 minutes over low heat. YIELD: Makes 8 1-cup servings

Both retired. 1 year until son finishes college, then financial freedom! We lost Max, the Schnoodle after 16 wonderful years but now enjoy Nicklaus Von Schnoodle (Nicky), who is a full time job. Our new Allegro Bay 34 XB is wonderful.
After I brown the meat and drain and add chopped onion and bell papper brown some more.
Add the cooked mac n cheese.
Make sure the mac n cheese has alot of milk so it will not dry out.
Place in the oven till bubbly and a lillte brown.
You can also add diced tomatos.
We like Hamburger steaks. Make a patty bigger than you would for regular hamburgers and grill or pan fry. Top with sliced cooked onions and brown gravy. Serve with rice and a veggie. Yummy
