How did you bake it though? Did you cover it, or maybe even add a little juice? Did you use a baking dish or just a baking sheet?
I have followed a recipe before for chicken that was real general - and without covering it, my chicken dried out.

I've tried it with pork also and it was really good. I use a brick platter to bake chicken in the oven and BBQ. Works great and the chicken is always moist.
