I'm sure that most of you have made the Bisquick Impossible Pie. It's quick and easy and good tasting too. Here's a new spin I just read about in my Bisquick Newsletter. Exchange the ground beef for some bulk breakfast sausage and serve it for breakfast!

Bisquick Impossible Pie
1 lb lean (at least 80%) ground beef
1 large onion, chopped (1 cup)
1/2 teaspoon salt
1 cup shredded Cheddar cheese (4 oz)
1/2 cup Original Bisquick® mix
1 cup milk
2 eggs

1. Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.

2. In 10-inch skillet, cook beef and onion over medium heat 8 to 10 minutes, stirring occasionally, until beef is brown; drain. Stir in salt. Spread in pie plate. Sprinkle with cheese.

3. In small bowl, stir remaining ingredients with fork or wire whisk until blended. Pour into pie plate.

4. Bake about 25 minutes or until knife inserted in center comes out clean.

Bake 30 to 35 minutes.

Here's another Impossible Pie that sounded good!

Impossibly Easy Quesadilla Pie

1 can (4.5 ounces) Old El Paso® chopped green chiles, well drained
2 cups shredded Cheddar cheese (8 ounces)
1 teaspoon chopped fresh cilantro
3/4 cup Original Bisquick® mix
1 1/2 cups milk
3 eggs

1. Heat oven to 400ºF. Grease 9-inch pie plate. Sprinkle chilies, cheese and cilantro in pie plate.

2. Stir remaining ingredients until blended. Pour into pie plate.

3. Bake 25 to 30 minutes or until knife inserted in center comes out clean. Cool 5 minutes. Serve with salsa if desired.

High Altitude (3500-6500 ft) Decrease milk to 1 1/4 cups. Bake 30 to 35 minutes.

Thanks for reminding us of the Bisquick pies--I even have a Bisquick cookbook that I'm going to look back through. I also like the idea of substituting sausage and serving as a breakfast pie.

Impossible pecan pie

Diane and Tom, that really sounds good. I use the "Impossible Pies" sight because they keep making new ones there and they are not in my
Bisquick recipe book. There are a lot of things you can do with Bisquick though, besides make biscuits.

Cruzette, have you tried the chicken tenders recipe on the box? That one has been jumping off the box at me for some time but I haven't made them yet.
