W6pea, this is the recipe from Alton Brown:

1 cup steel cut oats
1 cup dried cranberries
1 cup dried figs
4 cups water
1/2 cup half and half

In a slow cooker, combine all ingrediets and set to low heat. Cover and let cook for 8 to 9 hours.

Sir and remove to serving bowls. This method works best if started before you go to bed. This way your oatmeal will be finished by morning.

I use the small personal sized crockpot (sprayed with Pam). I think the first time I made it with the 4 cups of water, it was too thin for my tastes, so I cut it down to 3 cups plus the half and half and added some more half and half when its in my bowl. This makes quite a bit and I just put the crock in the fridge and each day dip out however much I want then nuke it. I've seen a lot of recommendations on add-ins, but I've never added the figs because I really don't think I'd like them as much. Raisins will blow up like grapes and are not as flavorful. Dates or any other dried fruit (except bananas) and coconut or even nuts could be added. Think I'd leave the nuts until serving. I'm just quite happy with the craisins. Of course, you can cut the recipe in half or even thirds if it suits you. And as Moonchild said, its just so good and a hot breakfast ready when you wake up.

If you put dried fruit in dry it will rob water from the oats. My point is that if you use more or less fruit, you should adjust the liquid. You can soak the dried fruit in warm water to avoid this.

I cook the WHOLE package at one time so its a once a week job. 3 cups oatmeal cooked with 12 and 1/2 cups water. We like the extra 1/2 cup of water but that's just us. I add dried fruit just before its done. Let it sit until cool then store in covered container in refrig. To eat, we spoon enough in a cereal bowl and warm it in the microwave. Add cinnamon, walnuts/pecans and skim milk. Sticks to the ribs & very good for us.

I made my first batch. It was great. But the next day, the pot was just one gelatenous rubbery mess. I nuked some, but it was very unappealling.

I have to add to Pat's post about the oatmeal. Mine was a bit crusty around the edges in the morning but because I had sprayed the crock with Pam it came away just fine and made for interesting texture when eaten. I think the next time I will use less water. I put the leftovers in the fridge and ate it cold the next morning. I'm sure it would have been good also heated up in the microwave but I wanted to see what it tasted like cold. Pat's comment about the dog not wanting to lick the bowl was right and very puzzling to us both. He usually will just have a fit waiting for our bowls so he can "wash" them for us but that morning he just turned his nose up at it and walked away....go figure.....

I tried a new method this week, using a wide mouth thermos. I used the 4-1 measure and poured boiling water over the oats in the thermos. I didn't stir or shake, I simply screwed the lid on. After sitting overnight they perfect in the morning.

You might try 7 grain or 8 grain cereal. I like it better than steel cut oats.

Been doing this for a while, also in the small $5 pot from wally World. I add Craisins or any other dried fruit(not too much), dash of cinnamon, little bit of fresh nutmeg, one capful of vanilla, and anything else that strikes my fancy. chopped apple, chopped pecan or walnuts, toasted sesame or flax seed, pumpkin seed, raisins, chopped dates, etc. you can realy vary your additions and it never gets boring. Don't forget to add a dash of salt! The nicest thing is that it makes the motor home smell wonderful when you wake up!
