We are leaving 11/5 to go camping at the Heritage Campground in Carthage, N.C. That weekend is their first annual chili cookoff. I have got to find a good chili recipe to share. Any ideas? What is your best chili recipe and would you please share.

Check the foodnetwork.com web site for cin chili. It, if I am not mistaken,is from a lady that won the Terlingua chili cook twice.

Are you looking for tasty chili or something with a lot of kick (spicy/hot)?
I have a pretty good crockpot chili recipe that is somewhat thick with a little kick to it. You can add or subject some spices to your flavor liking.
If this is something that you might like, let me know and I will post it here.

If I were entering a chili cook off I would go to the supermarket and buy 7 different cans of chili from different makers and all different flavors......beans, no beans, chunky, mild, hot, turkey, what ever........you get the idea........mix them all in the same pot and heat.....I bet if you don't win 1'st you'll get pretty close

Would like to have something not too hot but I can adjust the heat!
I found several recipes on Recipe.com and Foodnetwork.com but wanted something unique! I found one by Emeril that sounds good with Andouille Sausage.
I will also check out the from a lady that won the Terlingua chili cook twice.

Everyone is so used to having chili with hamburger. Try this one made with pork and beef that have been partially cooked and smoked. You can do this in a barbecue over low coals w/smoke chips or in a smoker. For the pork use boneless pork shoulder steaks or any cheap cut of pork steak. If you don't have or can't find the Glacé de Viande you can substitute low or no salt beef bouillon cubes.
Frank’s Chuck Wagon Chili
1 ½ Lb. Cubed lean beef (mesquite smoked) in a barbecue or smoker
1 ½ Lb. Cubed lean pork (mesquite smoked) in a barbecue or smoker
2 cups chopped onions
6-8 cloves chopped garlic
4 Stalks chopped celery
Hot to mild chili’s, seeded & ribs removed, chopped (amount and hotness to taste) or substitute two large cans of chopped green chili’s
1 28oz. Can chopped tomatoes plus 1 14oz. Cans chopped tomatoes
1 small can Tomato paste
3 to 4 Tbs Chili powder
2 tsp ground Cumin (or to taste)
1-2 Tbs Oregano
2-3 Tbs Worcestershire Sauce
2 to 3 1 ½" x 1 ½ ” cubes Glacé de Viande
4 Tbs cider vinegar
4 Tbs brown sugar
3 15 oz. Cans pinto beans
½ cup Dry white wine
Salt to taste
Pepper to taste
Sweat onions, garlic, celery and chili’s until just translucent. Add all the other ingredients and simmer over low heat or in a low oven (300?) for 2 to 3 hours, or in a crock pot for 4 to 5 hours on low.
**Note:
This is not hot unless you put in hot chili peppers.

2Lbs Hamburger
1 large onion (diced/chopped)
42oz Pettite Diced Tomatoes
32oz Kidney Beans (Drained)
21oz Tomato Soup
2 tablespoons of Chili Powder
1/2 teaspoon of Minced Garlic
1/2 teaspoon of Red Pepper
1 teaspoon of Cummin
Brown hamburger with diced onion
Strain hamburger and onion
Put in crockpot with other ingredients
cook in crockpot for a few hours (Stir occassionally) / taste /enjoy
