If we're going to get technical, you probably want a Chile recipes using chili's.
if I were going to compete I would play with dark beer or coffee. That's not how I make mine, but you do probably need something different.

Every time I read that I laugh until tears flow because it's so close to the truth! Yankees don't know chili.

If you want true chili use coarse ground beef. No turkey, andouille and absolutely no kidney beans! If you want beans use pinto but none are traditional.

Aside from meats, onions, tomatoes, garlic, cumin, smoked paprika, chili powder, sea salt, pepper, oregano. Beans or not, your choice. I like kidneys.

One of the secrets for great chili is to add natural, unsweetened chocolate as well as use several different types of chilis: Chipotles, green chilis, roasted jalapenos for complex, depth of flavors. Letting flavors “marry” over night is best.

Here's what we like:
1 lb meat. Ground beef, ground chicken or turkey, chopped smoked meat leftovers, whetever. Sometimes I add some chopped kielbasa, too.
1 lg diced sweet onion
1 diced red pepper
1 can geeen chiles, diced
1 can Manwich sloppy joe sauce
1 can diced tomatoes
3 to 4 cans beans, your choice
1 tbsp onion powder
garlic- fresh, roasted, or dry. Your choice and amount
1 tsp oregano
1 tbsp chili powder
1 tsp liquid smoke
1 tbsp cumin
1 tsp coriander
1 tsp marjoram
1 tsp savory
1-2 tsp sodium free beef bouillon granules, especially if you're using poultry instead of beef.
1 tsp cinnamon
1 tbsp cocoa powder
a bit of red wine or beef if you like. I also like a bit of Jack Daniels. Your choice.
Tobasco, chipotle tobasco, or Frank's hot sauce to taste.
Cayenne pepper to taste if you like heat.

Saute meat and drain. Saute herbs with meat for a bit to toast and bring out the flavor. Add diced onion and pepper. Saute til soft.
Add remaining ingredients and cook on barely simmer all day, or in crockpot.

This is sort of a Cincinnati style chili, which my husband likes. I also make a vat of it for a Boy Scout booth at octoberfest and it sells out.

For a budget stretcher, add a can of creamed corn and a can of MexiCorn. Serve over rice or pasta. I also like to serve in baked potatoes, with some cheddar and sour cream. We call them chili boats.

Beans, no beans. Ground beef vs whole diced meats. Red meat vs poultry. Whatever. Ignore pressure from others and do what makes you, your family, and your budget happy!

My winner...

2 lb ground lean beef
1 white onion, diced
1 green pepper 1/4 inch diced
2 red peppers same diced
1 tbsp minced fresh garlic
Medium can diced tomatoes (12 oz or so, just not the small one, and I dump the liquid off to keep it thick)
Large can Campbells tomato soup (maybe more, see as you go)
6 tbsp chili powder
Large can light kidney beans
Pinch of course black pepper
and the secret...One teaspoon of instant coffee. I use instant to keep the chili thick.

Brown and drain the GB, then add everyting else and simmer away.
I hope I did not forget anything. Try it before you head out. Sometimes I will dice the peppers and onion larger to give it a hardier look.

Friendly warning, if you are using hamburger meat and beans, you are not making chili and will not win anything. Also remember that a published winning recipe has probably been altered. No competition cook gives away his or her secrets.

I think it's fair to agree that "chili" means different things in different regions.
For instance, in Texas, if you put beans in, it's not chili.
However, in other areas, if you leave the beans OUT, it may be sloppy joe's instead of chili!!
I say, fix it any way you like, as long as YOU like it!!
