This is wierd finding this post as I have a box of stuffing sitting in the cabinet and had been considering this very thing.....guess I'm picking up eggs and sausage on the way home tonite...Dog ought to like it too.

Stuffing for breakfast ...?... HECK YES....!

It's great....

** Mix the stuffing per the instructions on box ... plus an extra one or two tablespoons of water to make the dressing a little extra moist..

-------- using 1/2 cup of prepared dressing per person --------

** Make a "patty" of dressing and place it into a frying pan with a tsp of melted margarine/butter.

** using a spoon or fork, press the center of the patty into a kind of concave shape to hold the egg.

** Fry dressing in an UN-covered pan over "Medium" heat... until edges of dressing turn crispy..

(never...never... cook with high heat)

** break one or two eggs into the little concave indentation you made in the crispy patty and ...
Now ... cover pan with lid...

DO NOT add any more water...or you'll have a soggy mess ...the raw eggs provide enough moisture.

** let it cook for about two or three minutes or until egg is "Poached" to your liking..

** serve with a side of your favorite Meat, Fruit and Beverage.


(my favorites are pork chop an Applesauce)

Leo, I want to try this really bad! To verify a couple of things - NO water at all, either for the benefit of the stuffing or the soup?

And the sausage is uncooked when mixed with the other two ingredients?

Michelle, that's it, no water, meat uncooked. Jut work it all together. The stuffing pulls moisture from the meat and undiluted soup. If you don't like cream of mushroom, you can use cream of chicken, but my mushroom-haters dont even realize the mushroom soup is in there.

Stuffing mix is excellent in meat loaf. I use it instead of bread crumbs. Try meat loaf with 1/2 ground beef and 1/2 breakfast sausage mixed with stuffing mix and eggs. Really good. Even better with sausage gravy made from some breakfast sausage set aside.
